I love recipes that are super easy but look difficult. This appetizer is one of those recipes! With only four ingredients how can you resist? If you are looking to impress at a tailgate... this is what you need to make!
Ingredients
1 loaf thin sliced white bread
1 lb hot sausage
1 8 oz cream cheese
1 lb bacon
Directions
Cook sausage (crumble) and drain. Combine sausage and cream cheese in a separate bowl. Mix until it has the consistency of a spread. Spread mixture on one piece of bread. Roll up and cut in half. Wrap ½ a piece of bacon (uncooked) around roll. Continue until mixture is gone). Bake at 350 degrees until bacon is cooked and the edges of the bread are nice and golden!

Christmas Pound Cake
I made this cake for the first time this Christmas. It was a big hit! Even my great aunts (who I think are some of the best southern cooks on earth) wanted to know how I made it! They didn't realize half of the recipe is a box of cake mix!
Ingredients
1 box pound cake mix
1 ¼ cups of eggnog
½ teaspoon vanilla
½ teaspoon nutmeg
2 eggs
Directions
Combine all ingredients and begin mixing on a low setting. Once ingredients are beginning to mix turn up the speed to a medium speed. Mix for two minutes until everything is nice and smooth. Pour into a loaf pan and cook at 350 degrees for about an hour. Use a toothpick to make sure the cake is cooked throughout.

Poor Man's Cobbler
My MIL gave me this recipe a couple years ago. It was one of my husband's favorite deserts so I was happy to get my hands on it! What I like about this dish is you usually have all the ingredients on hand so you can make it last minute!

1 Stick butter
1 Cup sugar
1 Cup flour (self rising)
1 Cup milk
Enough fruit to cover bottom of dish (frozen fruit works best)
Directions
*Melt butter in casserole dish until butter is melted at 375 degrees.
*Combine sugar, flour, and milk in a separate bowl.
*Pour frozen fruit in bottom of dish while in oven.
*Pour liquid mixture into dish.
*Bake for 30 minutes at 375 degrees.

Gracie K's Peanut Butter Cereal Balls
My great aunt Kay makes these yummy sweet treats each year for our family's annual 4th of July beach trip. I look forward to eatting them so much each year I finally asked her for the recipe so I can make them myself. These easy to make "cookies" have become a favorite at the firehouse!
Ingredients
½ Cup Brown Sugar
½ Cup Kyro Syrup
1 Cup Peanut Butter
3 Cups Korn Flakes or Special K Cereal
Directions
*Bring Brown Sugar and Kyro Syup mixture to a boil
*Remove from heat
*Stir in Peanut Butter
*Stir in Cereal
*When mixture is as hot as you can hold make small balls and place on wax
paper to cool/harden

Mexican Chicken
There is really nothing healthy about this meal (except the chicken) but it is oh so good! I like to think of it as an alternative (and much easier) version of my MIL’s enchilada recipe. I enjoy serving it with black beans and mexican rice. This would be a perfect meal to serve with the corn dip above when hosting friends for dinner!
Ingredients
1 can cream of mushroom soup
1 can of cream of chicken soup
1 can cheddar cheese soup
1 can Ro-Tel tomatoes
4 large chicken breast
2 cups sharp cheddar cheese
Flour tortillas (that could be used for soft tacos)
Directions
Mix soups and Ro-Tel together.
Cook chicken by boiling it (20 minutes for larger breast) until chicken is white and flaky
When chicken is cooked remove from pot and cut into small pieces. Add to mixture.
Line the bottom of a greased 9X13 dish with tortillas.
Spread mixture over tortillas. Continue to layer with tortillas finishing with the cheese.
Bake at 350 degrees for 30 minutes.

I got this recipe from a dear friend and old kindergarten team member. Ever since I have starting making it, the dip has quickly become a favorite. It is always my “go to” recipe for last minutes get togethers and tailgates.

1 8oz bar cream cheese
1 can Ro-Tel tomatoes with green chilies
1/2 teaspoon chili powder
1/2 teaspoon garlic powder
Directions
Mix all ingredients together
Bake at 350 degrees until bubbling (about 30 minutes)
Stir occasionally
Serve with your favorite tortilla chips
